Sicilian Pasta e Patate

Ingredients

  • 1 lb Yukon gold potatoes, cubed
  • 1 lb pasta
  • 1 yellow onion, diced
  • fresh basil, to taste
  • generous amount of olive oil
  • salt, to taste
  • black pepper, to taste
  • pecorino cheese, grated

Instructions

  1. Bring a pot of water to a boil and cook the cubed potatoes for 10 minutes.
  2. While potatoes cook, heat a generous amount of olive oil in a pan over medium-low heat.
  3. Add the diced onion and fresh basil to the pan, sautéing gently without burning the onions.
  4. Once the potatoes have cooked for 10 minutes, add them to the pan with the onions.
  5. Add a splash of pasta water to the potato mixture and let it simmer while you cook the pasta in the boiling water.
  6. Season the potato mixture with salt and pepper.
  7. When the pasta is cooked, transfer it directly into the pan with the potatoes.
  8. Gently stir the pasta and potatoes together, adding more pasta water as needed to help the starch create a creamy, glossy sauce.
  9. Remove from heat and stir in the grated pecorino cheese.
  10. Serve topped with a drizzle of extra olive oil.

Recipe Notes

This is a traditional, budget-friendly Sicilian-style 'Pasta e Patate'. The creaminess is achieved by the starch from the potatoes breaking down, rather than adding dairy or heavy sauces. Leaving some potato chunks larger adds texture to the dish.
