Cheesy Ground Beef & Broccoli Casserole

Ingredients

  • 1 pound 90%-lean ground beef
  • 1 small yellow onion, finely chopped (about ¾ cup )
  • 4 cups chopped broccoli florets
  • 3 tablespoons all-purpose flour
  • 1½ tablespoons minced garlic (from about 5 cloves )
  • 1 tablespoon chopped fresh sage
  • 1½ cups nonfat milk
  • 4 ounces cream cheese (about ½ cup )
  • 1 cup shredded sharp Cheddar cheese (about 4 ounces )
  • 2½ teaspoons no-salt-added garlic-and-herb seasoning , divided
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • ½ cup whole-wheat panko breadcrumbs
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon paprika

Instructions

  1. Position rack in upper third of oven; preheat broiler.
  2. Combine 1 pound ground beef and the chopped onion in a large broiler-safe skillet; cook over medium heat, breaking the beef into bite-size pieces with a wooden spoon, until the beef is no longer pink, about 10 minutes.
  3. Add chopped broccoli; cook, stirring occasionally, until tender-crisp, about 5 minutes.
  4. Add 3 tablespoons flour, 1½ tablespoons minced garlic and 1 tablespoon sage; cook, stirring constantly, until the mixture is well coated, about 1 minute.
  5. Add 1½ cups milk; bring to a lively simmer over medium-high heat. Cook, stirring constantly, until thickened, about 2 minutes.
  6. Stir in 4 ounces cream cheese and 1 cup Cheddar until melted, about 1 minute.
  7. Remove from heat and stir in 2 teaspoons garlic-and-herb seasoning, ½ teaspoon salt and ¼ teaspoon pepper.
  8. In a small bowl, combine ½ cup panko, 1 tablespoon oil, ½ teaspoon paprika and the remaining ½ teaspoon garlic-and-herb seasoning. Sprinkle evenly over the mixture in the skillet.
  9. Broil until the panko is golden brown and the edges are bubbling, 1 to 3 minutes.

Recipe Notes

Can be prepared through Step 2 up to 1 day ahead; keep refrigerated and bring to room temperature for 30 minutes before proceeding. Frozen broccoli may be used if thawed, drained, and blanched/pre-cooked. Dried sage (1 tsp) can substitute for fresh.
