Slow Cooker Curried Sausages

Ingredients

  • 500g ( 1.1 lb ) beef or pork sausages
  • 1 onion, sliced
  • 2 tsp garlic, crushed
  • 3 potatoes, cubed
  • 2 carrots, cubed
  • 1 cup frozen peas
  • 1 Tbsp curry powder
  • 2 Tbsp fruit chutney
  • 500ml ( 16.9 fl oz ) beef stock
  • 1 Tbsp cornstarch
  • 1 Tbsp water

Instructions

  1. In a frypan, cook the sausages over medium heat.
  2. Once cooked, allow to cool, and cut into bite-sized chunks.
  3. In a slow cooker, add the sausages, onion, garlic, potatoes, carrots, curry powder, fruit chutney, and the beef stock.
  4. Mix slightly.
  5. Cook on low for 6-8 hours.
  6. Mix the cornstarch with the water until it forms a paste.
  7. Next, mix the paste and peas into the curried sausages.
  8. Cook for 15 minutes or until thickened.
  9. Serve & Enjoy.

Recipe Notes

Adding peas toward the end prevents color loss. Fruit chutney provides sweetness; can be replaced by tomato chutney, honey, or sugar. Potatoes can be swapped for sweet potatoes. The recipe serves 6 and is freezer-friendly.
